Recipe: Coconut Butter Popcorn

We'll keep the first of our Nostalgic Summer Snacks Series pretty simple today. We are hitting 100 degrees and frankly, as much as I love experimenting in the kitchen, it's getting a little too warm in there.

In heat like this, it's hard to convince my kids to stay outside in increments longer than 10 minute and, while swimming would be our normal go-to, I can't say any of us are in the mood to swim in water that feels, at best, like luke-warm bath water.

Insert impromptu, mid-day, movies and popcorn. 

It's a classic on days where the weather is unbearable and everyone needs a little downtime from all of the summer buzz. For us, this means COCONUT BUTTER POPCORN!

A lot has changed since I was a kid and while I do so love the taste of fresh from the microwave, buttery, popcorn, I just can't in good conscience bring myself to feed that to my family. There are plenty of wonderful and healthier alternatives and air-popped, multi-colored, organic popcorn is where its at for me! The kid's love watching the brightly colored kernels pop into fluffy white gems of tastiness and I can rest assured that I'm giving them a treat I don't have to feel guilty about. 

While we aren't against a big 'ol buttery topping, the combination of salty and sweet that our Nate's Coconut Butter provides is pretty much perfection. Drizzle some of that creamy, white, goodness over some popcorn and sprinkle over a bit of pink Himalayan salt and chances are, you'll never go back to anything else.

NATE'S COCONUT BUTTER POPCORN

Tools:

  • Air-popper 
  • Measuring cups
  • Large bowl
  • Wooden spoon for mixing 

Ingredients:

  • Organic, multi-colored, popcorn kernels
  • Nate's Coconut Butter
  • Pink Himalayan salt
  • Nutritional Yeast or Raw Honey (optional)

Directions:

Measure out 3/4 C multi-colored popcorn kernels and place them in the unplugged air-popper.
Melt down 1/2 jar of Nate's Raw Harvest Coconut Butter on low heat until the butter is in liquid form. 
Place a large bowl under the mouth of the air-popper and plug-in the air-popper to begin popping the popcorn kernels.
Once the popcorn is finished popping and your popcorn bowl is full, drizzle the warm coconut butter over the top.
Taking a large wooden spoon blend the coconut butter so that it covers all the popcorn evenly. Sprinkle Himalayan salt over the popcorn to taste.
ENJOY!!!

If you're feeling super snazzy, coat the popcorn in a light dusting of Nutritional Yeast to add a "cheesy" flavor. 

If you're craving something a little sweeter, drizzle honey on top! (Mind you, this might create a bit of a sticky situation for little ones)
